Acai Blueberry Blender Waffles with Homemade Jam {gf,df}

Anyone else love acai so much, they'll eat it in any form? If so, this one's for you! This recipe is a new favorite in my house, and it has the perfect amount of "breakfast sweetness." Unpopular opinion, but I prefer waffles over pancakes any day; its something about the texture, and I'm a texture girl. These waffles are crispy on the outside, fluffy on the inside, and loaded with wholesome ingredients, such as the superfood acai, hearty oats, juicy frozen blueberries, fresh banana, and farm fresh egg. I also love that I can easily whip up the batter by throwing it all in the blender! Throw them in your mini waffle maker, drizzle with some gooey nut butter and some fresh berries, and you're good to go. Although not vegan, these are dairy free and gluten free!



Prep time: 4 minutes

Cook time: 2 minutes/waffle

Makes: 4 mini waffles



1/2c rolled oats

1 egg

1tbs pure maple syrup

2tsp acai powder

1/2tsp maca powder

1/4c unsweetened almond milk

1/2tsp baking powder

1/2tsp cinnamon

1/2c frozen blueberries

Berry Jam:

1/2c frozen blueberries

1/2c frozen raspberries

1tbs chia seeds

1tbs maple syrup

1tsp coconut oil


1. Heat waffle maker, greased with a little coconut oil.

2. Add dry ingredients to the blender, and blend until oats are fine and everything is combined.

3. Add in your egg or mashed banana, and almond milk to blend.

4. Once smooth, scoop out batter onto greased waffle maker, add a small handful of blueberries and close the waffle maker.

5. Cook until waffle maker says their done {about 2 minutes}, and repeat with the rest of the batter.

6. While each waffle cooks, you can make the jam.

7. Add berries to a small skillet on medium-low heat, and squish with a fork, leaving some chunky.

8. Add in the rest of the jam ingredients, and stir until well combined.

6. Stack em up and top with your toppings of choice!
