Chicken & Veggie Hibachi Noodles {gf,df}

A hibachi inspired dinner comin' right at ya! Iv'e been thinking about developing this recipe for months on end, but it always slipped my mind when it came dinner time. I love a good hibachi dinner out with friends and family for birthdays, but I don't really love all the oil, butter, and soy sauce; it's just not appetizing for me. I developed this recipe with clean ingredients, and to be completely honest- I threw this together just hoping it would work. Guess what, it did! I use chicken as the protein for this dish, but any source of protein would pair the same. For the sauce, I threw together a mixture of tahini, garlic, cornstarch, coconut aminos, coconut butter, and raw honey! This recipe is gluten free and sure to blow your mind.

 
 

RECIPE

Prep time: 5 minutes

Cook time: 25 minutes

Total time: 30 minutes

Serving size: 3


INGREDIENTS

1tbs avocado oil

3 organic chicken breasts

1 package of buckwheat soba noodles

2c green beans

2 large carrots

1 large zucchini

1/4c coconut aminos 1tsp cornstarch

1-2 cloves garlic

2tbs tahini

1tbs raw honey

1tbs coconut butter

Pink salt, black pepper, red chili flakes {to taste}


METHOD

1. Preheat oven to 400 and prep baking sheet.

2. Cut up chicken into bite size pieces, and chop all veggies.

3. Season chicken with pink salt, black pepper, and red chili flakes, and air fry for 13 minutes at 350.

4. Add vegetables to a large bowl and toss with 1/2tbs avocado oil.

5. Transfer to oven and bake for 20 minutes.

6. Now bring a medium pot of water to boil.

7. Add in soba noodles and let simmer for 6 minutes.

8. Heat a large skillet with 1/2tbs avocado oil and 1tbs coconut butter on medium.

9. Strain noodles and add to the skillet.

10. Add in coconut aminos, minced garlic, cornstarch, tahini, and raw honey.

11. Now transfer the air fried chicken to the skillet and mix well.

12. Once the vegetables are cooked, add them to the skillet as well.

13. Mix all ingredients for 2-4 minutes and add a sprinkle of seasonings.

14. Remove from heat, plate, and enjoy!
