Chunky Apple Crisp Granola {gf,v}

Oh yeah, did I mention I've decided it's fall already? This quarantine has made me realize that when I wake up, I really can make it any day I want it to be. So, I decided to get festive and make this chunky granola. This granola is bursting with apple crisp flavor, with chunks of apples and fresh spices. Along with that, there are other clean ingredients thrown in there, such as oats, almond butter, nuts, chopped dates, pure maple syrup, and more. I call this apple crisp granola because its the best of both worlds; it's got chunky apples mixed with a apple spiced, chunky crumble. What more could you ask for? Pair this with yogurt, ice cream, plant based milk, or whatever you desire! It's super easy, blender friendly, gluten free, and vegan.

 
 

RECIPE

Prep time: 7 minutes

Bake time: 25 minutes

Serving size: 8


INGREDIENTS

1c gluten free rolled oats

1 apple

1/2c walnuts

5 pitted dates

1tbs hemp seeds

2tbs flaxseed meal

1tsp maca powder

2tbs melted coconut oil

2tbs almond butter

3tbs pure maple syrup

1tsp cinnamon

1tsp pure vanilla

*2tsp apple pie spice

Sprinkle of pink salt


METHOD

1. Preheat oven to 325 F and line a baking sheet with parchment paper.

2. Add all ingredients to a food processor or blender, besides the oats.

3. Pulse until the apple is chopped up and well combined into the rest of the granola.

4. Remove from food processor and fold in the oats and dates.

5. Mix until oats are well combined with the rest.

6. Then chop the dates and fold those in.

7. Transfer to the prepped baking sheet and press down into one sheet.

8. Add a sprinkle of pink salt and an additional sprinkle of apple pie spice. {optional to add more chopped apple pieces on top}

9. Bake for 25-27 minutes or until golden brown.

10. Remove from oven and let cool for at least 15 minutes before breaking into clusters.


*Sub 1/2tsp ginger, 1/2tsp cardamom,1/8tsp cloves, and additional 1/2tsp cinnamon + nutmeg.
