Chunky Pumpkin Spice Granola {gf,v}

Are you tired of all the pumpkin spice recipes yet? Uh never. This granola adds a fun flavor to any yogurt bowl, smoothie, cereal, or snack any time of year. I crafted this recipe with a mix of oats and an assortment of nuts for that crunchy texture. That's pretty much it. It mean, who doesn't love granola? I guarantee you'll love this; try it out for yourself!


 
 

RECIPE

Prep time: 7 minutes

Cook time: 30 minutes

Serving size: 15


INGREDIENTS

2c gluten free rolled oats ⁣⁣⁣⁣⁣ 1/2c gluten free quick oats ⁣⁣⁣⁣⁣

1/4c coconut flour 2tbs unrefined coconut oil 1/4c raw honey 2tbs flaxseed meal ⁣⁣⁣⁣⁣

6 pitted dates 1c chopped nuts {walnuts, almond slivers, pecans} 1tbs chia seeds and hemp seeds⁣⁣⁣⁣⁣ 1/4c pumpkin pure ⁣⁣⁣⁣⁣ 2tbs almond butter ⁣⁣⁣⁣⁣ 1tsp pure vanilla ⁣⁣⁣⁣ ⁣⁣ ⁣1tsp pumpkin pie spice

1/2tsp cinnamon ⁣⁣⁣⁣

1/2tsp pink salt


METHOD

1. Preheat oven to 325 and line a baking sheet with parchment paper. 2. Chop dates and nuts if not already chopped or slivered.

3. Melt coconut oil and add all ingredients to a large bowl and mix well.

4. Transfer to prepped baking sheet and press down to create one large sheet.

5. Bake for 30 minutes or until golden brown.

6. Let cool for 10 minutes before breaking apart into desired granola clusters. Store in air tight container or mason jar.
