Cinnamon Apple Crumble Banana Bread {df, gf}

I'll just start out by saying: everything about this bread screams fall! I personally love the combination of banana and apple, and the cinnamon adds such a nice flavor. This is my second year making this bread, and this year I decided to make it gluten free. I love it both ways, but I love how moist the bread came out using almond flour. This bread features many nutritious swaps, such as pure maple syrup, almond butter, flaxseed meal, coconut sugar, and more. Anyway, I brought this bread on my annual camping trip in bread and muffin form, and it was a hit! The crumble topping really makes it, especially for all the texture people like me.


 
 

RECIPE

Prep time: 7 minutes

Bake time: 55 minutes

Serving size: 10


INGREDIENTS

Banana Bread:

2 overripe banana⁣⁣

1 large apple 2 farm fresh eggs⁣⁣ 2c almond flour ⁣⁣ ⁣ 1/3c pure maple syrup

1/3c coconut sugar ⁣⁣ 2tsp baking powder ⁣⁣ 1/4c flaxseed meal⁣⁣ 1tbs maca powder ⁣⁣ 1/4c almond butter⁣ 1/2tbs ground cinnamon ⁣⁣ 1tsp pure vanilla⁣⁣ 1/4tsp pink salt


Crumble:

1/3c gluten free rolled oats

1/2c chopped pecans + walnuts 1tbs coconut sugar + 1tbs maple syrup ⁣

2tbs pumpkin seeds

1tbs each: hemp seeds + chia seeds 2tbs melted coconut oil⁣

1/2tbs maca powder 1/4tsp pure vanilla⁣ 1tsp apple pie spice ⁣ Sprinkle of pink salt


METHOD

1. Preheat oven to 350° and line a loaf tin with parchment paper.

2. Dice the apple into small bites.

3. In a large bowl, mash the bananas and add in the apple.

4. Add in the rest of the wet ingredients and whisk {eggs, maple syrup, almond butter, vanilla extract}.

5. In a separate bowl, mix all dry ingredients {flour, maca powder, flaxseed meal, coconut sugar, baking powder, pink salt, cinnamon}

6. Once mixed, fold the dry ingredients into the wet.

7. In a separate bowl, add all crumble ingredients.

8. Pour banana bread batter into loaf tin and top with the crumble evenly.

9. Bake for about 55 minutes or until toothpick is clean.

10. Add all crumble ingredients in a large bowl and mix well {making sure the coconut sugar and apple pie spice is coated evenly}.
