Everyday Salad With 'Cheezy Chickpea Crouton' {v,gf}

If you're a croutons lover, but looking for an alternative, this recipe is for you. This salad features 'cheezy' crispy air fried chickpeas, in replace of croutons. Not only do I personally love chickpeas, these add the perfect crunch factor to any salad. This recipe uses nutritional yeast, which is a vegan yeast that gives of a nice cheese flavor. The rest of the salad is fairly simple; it's just greens and minimal vegetables. However, you can add additional veggies to make it your jam.


 
 

RECIPE

Prep time: 5 minutes

Cook time: 15 minutes

Total time: 20 minutes

Serving size: 2


INGREDIENTS

1/2tbs avocado oil

3c organic spring mix & romaine ⁣⁣⁣mixed 1/2 large cucumber ⁣⁣⁣ 1c chickpeas

2tbs nutritional yeast

Pink salt, black pepper, mushroom & co, red chili flakes ⁣⁣{to taste}


Dressing:

2tbs olive oil

1tbs white wine vinegar

Juice from 1/2 lemon

1/2tbs nutritional yeast

Red chili flakes, pink salt, lemon pepper, basil { to taste}


METHOD

1. Preheat air fryer to 350.

2. Chop the romaine and cucumber, and drain + rinse the chickpeas.

3. Transfer chickpeas to a small bowl, and add the avocado oil, nutritional yeast, and spices.

4. Lay in air fryer and air fry for 15 minutes.

5. While that's going, make the dressing.

6. Mix all dressing ingredients together in a cup or bowl and stir well.

7. Add romaine, spring mix, and cucumber to a large serving bowl and pour in the 'cheezy' chickpeas.

8. Drizzle the dressing on top, toss, and transfer to individual serving bowls to serve!
