Fudgy Sunflower Flour Brownies {gf/lf}

Yay, more 'healthier' desserts! When it comes to food, I don't believe in placing labels, such as "good" or "bad," but I refer to my recipes as 'healthier' because they lack refined sugars and artificial ingredients. Anyway- enough with that spiel, let's get to the point: brownies! Well my friends, these are the fudgiest brownies, and they use a special, gluten free flour: sunflower flour. Just like the sunflower oil I use in other recipes, this flour is a product of local sunflowers from Hudson Valley Cold Pressed Farms. And guess what- you can order their products right from their site, so you can get your hands on this exact flour! This recipe is sweetened with maple syrup and date nectar {what's new}, and uses a mix of coconut butter and grass fed ghee. Ghee is not dairy free, however, it is lactose free! You, of course, can sub additional coconut butter or coconut oil if needed. I love making these brownies for holidays and get togethers, and no one can tell the difference between these and boxed brownies! These brownies are gluten free and lactose free.


 
 

RECIPE

Prep time: 8 minutes

Bake time: 18-22 minutes

Total time: 26-30 minutes

Makes: 16 brownies


INGREDIENTS

2 eggs ⁣⁣⁣⁣⁣ 1/4c sunflower flour ⁣⁣⁣⁣⁣ 1/3c + 1tbs coconut butter ⁣⁣⁣⁣ 2 tbs grass fed ghee ⁣⁣⁣(sub coconut butter for dairy free) ⁣⁣ 1/3c pure maple syrup ⁣⁣⁣⁣⁣ 2tbs date nectar ⁣ 1/2c @enjoylifefoods dark chocolate chips ⁣⁣⁣⁣⁣ 2tbs creamy almond butter ⁣⁣⁣ 1/2c unsweetened cacao powder ⁣⁣⁣⁣⁣ 2tbs almond milk ⁣⁣⁣⁣⁣ 1tsp baking soda ⁣⁣⁣⁣⁣ 1/4 tsp pink salt ⁣⁣⁣⁣⁣


METHOD

1. Preheat oven to 350° and line square baking dish with parchment paper.

2. In a sauce pan, heat the ghee, coconut butter, almond butter, and maple syrup on low heat.

3. Once the butter & syrup are melted, add in the cacao powder, almond milk, & dairy free chocolate chips until all chips are melted.

4. Then remove from heat, & in a large bowl, add the eggs, sunflower flour, baking soda, & pink salt.

5. Stir until batter is formed.

6. Pour batter into prepped baking dish evenly.

7. Sprinkle with coarse pink salt, & bake for 18-22 mins.

8. ⁣⁣⁣Let cool completely before enjoying!
