Healthy Chicken Nuggets {gf, df}

Growing up, McDonalds and Dairy Queen were our go to spots. My brother and I kept busy with sports, so we were always on the run; as kids, McDonalds and DQ were a dream. Speaking of both, the only thing I would get at either was the chicken nuggets or chicken tenders. However, as I got older, I really grew to love grilled chicken, and only grilled chicken. Until, my boyfriend took me to Chick-fil-A for the first time a few months, and I was like "hey, I could go for this every once in a while." Even though, I don't live anywhere near one. So, wheels were turning, and that's when I decided to develop my own healthy chicken tenders. This recipe is entirely gluten free, and it uses coconut flakes and almond flour as the breading. This recipe is so easy to make and tastes like the real deal chicken nuggets.


 
 

RECIPE

Prep time: 7 minutes

Cook time: 15 minutes

Total time: 22 minutes

INGREDIENTS

1tbs olive oil

1lb organic chicken breasts

1/4c almond flour

1/2c unsweetened coconut flakes

3tbs nutritional yeast

1tbs Trader Joe's rice crumbs {optional}

1 free-range egg

1tsp onion powder & garlic powder

1/4tsp Trader Joe's mushroom & co. seasoning

Paprika, pink himalayan sea salt, black pepper {to taste}


METHOD

1.Preheat air fryer to 350.

2. In a large bowl, mix almond flour, nutritional yeast, rice crumbs, coconut flakes and spices.

3. In a separate bowl, crack & whisk the egg.

4. Remove chicken breast from package and slice into small chunks {for nuggets} or long strips {for tenders}.

5. Roll the strips or nuggets in the egg mixture, then transfer to the breading and coat each piece entirely.

6. Transfer to the air fryer, drizzle with a little olive oil, and air-fry for 15 mins. 7. Remove from air fryer and enjoy with with your choice of dipping sauce. {I dipped these in Rao’s organic tomato sauce or throwing over a salad}.
