Healthy One Skillet Carrot Cake Granola {gf,v}

I recently got a few requests for carrot cake granola over on my Instagram @wellnesswithmak, so here it is! I'm all about transforming my favorite treats into healthy granola, especially when it's done in 10 minutes. This nutrient dense recipe features another one of my One Skillet granolas, with the amazing, lightly sweetened flavor of carrot cake. This granola includes hearty oats {per usual}, along with crushed walnuts, raisins, creamy almond butter, coconut flakes, pure maple syrup, and fresh spices, such as cinnamon, nutmeg, and allspice. Throw this in your morning yogurt bowls or cereal with dairy free milk and you'll think you just took a bite out of a slice of carrot cake. I love this method of making granola because not only is it efficient, but it gives the ingredients the perfect crisp and crunch! Per usual, this is vegan and gluten free friendly.


 
 

RECIPE

Prep time: 3 minutes

Cook time: 7 minutes

Serving size: 8


INGREDIENTS

1tbs coconut oil

2c gluten free rolled oats

1c chopped walnuts

5 pitted dates

1-2 large shredded carrots

1tsp cinnamon

1/2tsp nutmeg + allspice

1/4c coconut flakes

2tbs flaxseed meal

1tbs hemp seeds

1tsp vanilla

2tbs pure maple syrup

2tbs almond butter

1/4c raisins


METHOD

1. If walnuts are not pre-chopped add to food processor and pulse until mostly broken up.

2. At the same time, shred carrots and chop dates into small pieces {same size as chopped walnuts}.

3. Heat a large skillet on medium heat with the coconut oil.

4. Add in all dry ingredients: {walnuts, shredded carrot, oats, coconut flakes, seeds, dates, spices, flaxmeal} and stir/toss for 3-5 minutes.

5. Cook until starting to crisp, then add in the almond butter, vanilla, and maple syrup.

8. Fold in raisins and mix well for an additional 4 minutes. Flip/stir often to prevent burning.

9. Remove from heat, and allow to cool for 10 minutes before serving or storing in an air tight container or mason jar!
