Kitchen Sink Quinoa Brittle {gf,v}

The granola game just changed, big time! This Quinoa Brittle is a fun spin on granola, and it includes a ton of ingredients you can find sitting around the kitchen. It is full of wholesome ingredients, such as tricolor quinoa, gluten free oats, the superfood: maca powder, unsweetened coconut flakes, and more. Not only that, this brittle consists of many nuts and seeds that provide a significant amount of fiber, antioxidants, and plant based protein. There is a light, natural sweetness to this recipe due to the pure maple syrup and pitted dates. Not to mention, this brittle is super simple to make; you pretty much blend everything together in a food processor. To describe the flavor, it is a nutty, maple cinnamon combination, which pairs perfectly with yogurts, smoothies, oats, and as a snack on its own! This brittle is also gluten free and vegan friendly.

 
 

RECIPE

Prep time: 7 minutes

Bake time: 25 minutes

Serving size: 6


INGREDIENTS

1/2c uncooked tricolor quinoa

1/2c gluten free rolled oats

1/4c walnuts + almonds

1/4c unsweetened coconut flakes

1/4c flaxseed meal

2tbs Georgia Grinders pecan butter {use code: wellnesswithmak for 20% off!}

2tbs chia seeds

5 pitted dates

2tbs pure maple syrup

2tbs melted coconut oil

1/2tbs maca powder

1/2tsp cinnamon + a few dashes of allspice

2tbs pumpkin seeds


METHOD

1. Preheat oven to 325 F and line a baking sheet with parchment paper.

2. Add all ingredients to a food processor and pulse until well combined. It should start clumping together.

3. Remove and transfer to the prepped baking sheet.

4. Press down with a spatula or your hands to form one large sheet of brittle.

5. Sprinkle with pink salt and bake for 25 minutes or until golden brown!
