Lemon Poppyseed Granola {gf,df}

AH who else is screaming because it's finally Spring? I'm so ready for the temperature to start rising, the pools beginning to open, and the flowers starting to bloom. In light of Spring, I crafted this recipe: Lemon Poppyseed Granola! I love all things lemon, whether it's lemonade, lemon cake, or lemon poppyseed muffins. However, my fave is lemon poppyseed everything, so I figured, why not make a granola? This granola has just the right about of lemon and sweetness to make it an bangin' granola. I love sprinkling this over dairy free yogurt or a fruity smoothie bowl; It's also amazing by itself!


 
 

RECIPE

Prep time: 7 minutes

Bake time: 22-24 minutes

Serving size: 8


INGREDIENTS

1/4c gluten free rolled oats

1/4c each: walnuts, almonds, pecans

Juice from 1 lemon

1/4c raw honey

1/2tsp vanilla

1/4c coconut flakes

2tbs almond butter

2tbs hemp seeds

2tbs poppy seeds

1/4tsp cinnamon

Sprinkle of pink salt


METHOD

1. Preheat oven to 325 F, and line a baking sheet with parchment paper.

2. Juice lemon and add all ingredients to a blender.

3. Pulse a few times until everything is broken up and chunky.

4. Transfer to baking sheet and press down into one large, flat sheet.

5. Sprinkle with pink salt and bake for 22-24 minutes or until golden brown on top.

6. Let cool for 1o minutes before breaking apart into granola clusters.
