Nutella Stuffed Peanut Butter Cookies {gf,v}

Peanut butter and Nutella are both two of the best spreads to exist, but combined... it's magical. These cookies are the perfect peanut butter cookie, with a nutella surprise inside. The nutella I used is my homemeade Chocolate Hazelnut Butter, which you can find in my recent blog posts. These cookies are the perfect combination of sweet, salty, gooey, and crispy. Not to mention, there are only 5 main ingredients. Of those are wholesome ingredients, such as Georgia Grinders creamy peanut butter, pure maple syrup, flaxseed meal, almond flour, and pure vanilla. It doesn't get much better than this; these cookies are delicious and easy to make! Plus, they're gluten free and vegan.


 
 

RECIPE

Prep time: 7 minutes

Bake time: 13-15 minutes

Makes: 16 cookies


INGREDIENTS

1/2c Georgia Grinders creamy peanut butter {wellnesswithmak: 20% off}

1/4c my Chocolate hazelnut butter

1/3c almond flour

1/4c melted coconut oil

1/4c flaxseed meal

2tbs pure maple syrup

1/4tsp madagascar vanilla

1tsp baking soda

Sprinkle of pink salt


METHOD

1. Preheat oven to 350 F and line a baking sheet with parchment paper.

2. Add all ingredients to a large bowl {besides the chocolate hazelnut butter} and mix.

3. Make the chocolate hazelnut butter if not already made {recipe on my blog}.

4. Roll the chocolate hazelnut butter into small balls {about 1/2 inch thick}

5. Scoop the peanut butter batter into balls, flatten, place the nutella in the center, and close back into a ball. Repeat until all the batter and nutella is used.

6. Lay the balls out on the parchment paper and press down with a fork, making a cross.

7. Sprinkle with pink salt and bake for 13-15 minutes.

8. Remove from oven and let cool for 10 minutes before enjoying.
