Raw Thin Mint Bliss Ball Truffles {gf,v, rsf}

Thin mint lovers, these are for you. These protein ball truffles balance the right sweetness of chocolate with a fresh touch of mint. The key in this recipe is the cacao nibs that replace the classic chocolate chips in the mint chocolate chip flavor. Plus, they're all drizzled with or dunked in a melty layer of dark chocolate. This is what elevates these from an energy ball, to a festive dessert or treat. This recipe is packed with nutrient dense ingredients, such as dates, oats, almonds, cacao powder, almond butter, pure maple syrup, and peppermint. Throw these together in under 20 minutes, and you've got a holiday dessert set- these are gluten free, vegan, and refined sugar free.



Prep time: 20 minutes

Serving size: makes 16 protein balls


1/2c pitted dates

1c gf rolled oats

1/3c almonds

3tbs cacao powder {sub chocolate protein powder}

1tbs unsweetened almond milk

1tbs Georgia Grinders original almond butter {wellnesswithmak for 20% off}

1/2tsp pure vanilla

1/4tsp organic peppermint flavor

1/4c cacao nibs

1/4c hukitchen chocolate gems

pink salt


1. Soak pitted dates in water for 10 minutes.

2. Add dates and all other ingredients, besides cacao nibs and chocolate gems to a food processor.

3. Blend until clumping together.

4. Fold in half the cacao nibs, and stir gently.

5. Roll batter into balls using a cookie scoop, about 1-inch thick and place on a plate or tray.

6. Place in freezer for 5 minutes to harden.

7. While those harden, melt chocolate.

8. Remove protein balls from freezer and drizzle chocolate over top or dunk each in the chocolate.

9. Sprinkle with pink salt and the remainder of the cacao nibs.

10. Store in the fridge for up to one week in an air tight container. Enjoy!
