Vegan Gingerbread Crumble Bread {gf,v,rsf}

Despite what people may say, gingerbread does not only belong in cookies. This bread is seriously the best! It's packed with all the classic gingerbread staples, along with more nutrient dense swaps, such as coconut sugar, oat flour, pure maple syrup, flax eggs, unsweetened almond milk, coconut oil, and more. What makes this bread the best is the thick crumble on top, loaded with lots of spices. The crunchy crumble mixed with the moist bread is the perfect texture combo. Plus, this recipe is fully vegan and gluten free. Definitely worth adding to your Christmas dessert line up!

 
 

RECIPE

Prep time: 10 minutes

Bake time: 35-40 minutes


INGREDIENTS

1 3/4c oat flour

2 flax eggs {2tbs flaxseed meal + 5tbs filtered water}

1/4c blackstrap molasses

1/3c coconut sugar

2tbs pure maple syrup

2tbs unsweetened almond milk

1/3c melted coconut oil

1tsp baking soda

1tsp baking powder

1tsp cinnamon

1 1/4tsp ginger

1/2tsp cloves

1/4tsp pink salt


Crumble:

1/4c quick oats

2tbs flaxseed meal

2tbs melted coconut oil

2tbs coconut sugar

3/4c oat flour

cinnamon, ginger, cloves to taste

dash of pure vanilla

pink salt


METHOD

1. Preheat oven to 350 F and prep a baking dish with parchment paper or coconut oil.

2. Make the flax eggs by combining 2tbs of flaxseed meal with 5tbs of water. Let sit for 5 minutes.

3. While that sits, make your crumble by combining all crumble ingredients in a medium size bowl. If too sticky, add more flour until starting to clump together. Then set aside.

4. Add all wet ingredients to a large bowl to whisk {almond milk, maple syrup, flax eggs, coconut sugar, coconut oil, molasses, vanilla}.

5. Once smooth, fold in all dry ingredients {flour, cinnamon, ginger, cloves, pink salt, baking soda, baking powder}. Mix until well combined.

6. Transfer batter into your prepped baking dish evenly.

7. Sprinkle the crumble over top until covering all of the batter.

8. Bake for 35-40 minutes or until a tooth pick comes out clean.

9. Remove from oven, let cool for 10 minutes, and enjoy!
