
Mini Protein Cinnamon Rolls {gf, df, rsf}

The perfect mini cinnamon rolls don’t exi... oh wait, yes they do. These mini cinnamon rolls are the perfect, protein packed single serve treat. This recipe features one of my favorite nut butters by Abby’s Better: cinnamon roll infused protein almond butter. It is a game changer for this recipe, but it also makes it so simple! These little rolls are packed with some of my favorite dairy free and gluten free swaps, such as gluten free flour, vegan butter, coconut sugar, and unsweetened nut milk. They do not require many ingredients, and are no yeast rolls. They're gluten free, dairy free, refined sugar free, along with delicious and more nutrient dense. You’re gonna love them, I promise!

RECIPE
Prep time: 5 minutes
Bake time: 20-23
Serving size: 6-8 mini rolls
INGREDIENTS
dough:
3/4c gluten free flour
1tbs coconut sugar
3tbs nut milk
2tbs softened vegan butter
1tsp cinnamon
1tsp baking powder
1tsp vanilla
filling:
1tsp vegan butter
1/3c Abby’s Better cinnamon roll almond butter
1tbs coconut sugar
1tsp cinnamon
flakey sea salt
drizzle:
1tsp nut milk
2tbs pure maple syrup or raw honey (if not vegan)
1tsp partially melted vegan butter
1/2 scoop vanilla collagen or protein
1/2tsp cinnamon
METHOD
1. Preheat oven to 350° F and grease a round dish with coconut oil.
2. In a bowl, combine dough ingredients. Mix until well combined and forming a ball. Set aside for a few minutes.
3. To make part of the filling, add vegan butter and nut butter to microwave safe bowl and microwave for 15 seconds. Mix.
4. Now add dough in between two pieces of parchment paper and roll out flat.
5. Add the melted nut butter mixture to the flat dough. Spread evenly to all corners.
6. Sprinkle coconut sugar, cinnamon, and flakey sea salt over top.
7. Gently pick up one end, and start to roll until in a log shape.
8. Carefully cut the rolled dough into individual rolls. (about an inch thick).
9. Transfer to prepped circle dish, and bake for 20-23 minutes.
10. While they bake, make the filling. Start by melting the vegan butter in a small dish for 5 seconds. Add in the remainder of the ingredients. It should be a thin, but not too liquified glaze.
11. Remove rolls from oven and let cool before adding the glaze. Enjoy!
