White Bean & Veggie Cauli Gnocchi Soup {gf,v}

There's nothing liked a hearty bowl of soup loaded with nutritious goodness {yes, that phrase is a thing in my dictionary}. I don't know about you guys, but it's been freezing in New York this winter; no snow, but definitely cold. Because of this and the fact that I can't let go of this annoying cold, this soup has been a major fave. This recipe is loaded with wholesome ingredients and features one of my favorite products from Trader Joe's: cauliflower gnocchi! The gnocchi is the perfect addition to this soup when combined with all the veggies. I love pairing mine with a slice of fresh sourdough from a local bakery.

This recipe is dairy free, gluten free, and vegan.


 
 

RECIPE

Prep time: 25 minutes

Cook time: 25 minutes

Serving size: 8


INGREDIENTS

1/2tbs olive oil

3 large carrots

5 stalks of celery 1 large sweet potato ⁣⁣⁣⁣ 2 cups mushrooms ⁣⁣⁣⁣ 1 package cauliflower rice ⁣⁣⁣⁣ 3 cloves garlic minced ⁣⁣⁣⁣ 1 small white onion diced ⁣⁣⁣⁣ 1 can white cannelloni beans {salt free} 2 cups spinach ⁣⁣⁣⁣ Fresh parsley + fresh basil diced ⁣⁣⁣ 1 package @traderjoes cauliflower gnocchi ⁣⁣⁣⁣ 1 box vegetable broth + 3 cups water⁣⁣⁣⁣ 1/4tsp onion powder and garlic powder

Red chili flakes, @traderjoes mushroom & co., pink salt, lemon pepper ⁣⁣⁣{to taste} ⁣ ⁣METHOD

1. Chop and peel all veggies.

2. Once all veggies are chopped, heat skillet with olive oil.

3. Sauté diced onion & garlic for about 7 mins on medium heat.

4. At the same time, microwave cauliflower gnocchi for 2 minute

5. Remove from microwave, sprinkle with lemon pepper & pink salt, and air-fry @ 350 for 13 mins.

6. Once everything is done, add all ingredients to large pot.

7. Bring the pot to a boil, then reduce to simmer for 25 minutes.

8. Add more fresh parsley & basil, along with all other seasonings and serve!
