White Chocolate Cranberry Cookies {gf,v,rsf}

More holiday cookies my friends! These white chocolate cranberry oatmeal cookies ~simply~ scream Christmas. I don't know about you, but my family loves to have every flavor of holiday cookies on deck for Christmas Day. These cookies are crispy on the outside, chewy in the inside, and packed with flavor. I mean, the cranberry and white chocolate combo is just unbeatable. They're packed with my favorite more nutritious baking ingredients, such as rolled oats, gluten free baking flour, coconut sugar, pure maple syrup, unrefined coconut oil, almond butter, and more. You can find all these ingredients at your local grocery store. Not only are these cookies packed with high quality ingredients, but they are super quick and easy to make. You've got a batch or two of cookies in under 20 minutes! Plus, these cookies have something for almost everyone to enjoy; they are gluten free, dairy free, and refined sugar free. Run, don't walk- you're going to love these!


 
 

RECIPE

Prep time: 5 minutes

Bake time: 12 minutes


INGREDIENTS

1c gluten free baking flour

1c gluten free rolled oats

1 free range egg

1/4c almond butter

1/2c coconut sugar

1/3c melted unrefined coconut oil

2tbs pure maple syrup

1tsp vanilla

1/2tsp baking soda

1/4tsp baking powder

1/3c dried cranberries

1/3c white chocolate chips {vegan or regular}


METHOD

1. Preheat oven to 350 F, and prep a baking sheet with parchment paper.

2. In a large bowl, mix all wet ingredients {egg, maple syrup, almond butter, vanilla, coconut oil, coconut sugar}.

3. Once mixed well, fold in dry ingredients {flour, oats, baking soda, baking powder, pink salt to taste}

4. Mix the dry and wet ingredients well until fully combined.

5. Once combined, fold in white chocolate and dried cranberries until mixed evenly throughout the batter.

6. Use a cookie scoop to form cookie dough balls and transfer to prepped baking sheet.

7. Prep down slightly, sprinkle with additional pink salt, and bake for 12 minutes or until turning a nice golden brown color.

8. Once down, remove from oven and let cool for 10-15 minutes. Enjoy!
